Step 1
Put a bell pepper on the flame, burn the skin off, let the skin becomes black. Turn the pepper over, let its all sides burned off. 3-4 minutes per side.
Step 2
Put the pepper in a zip-lock bag, seal the bag. Squeeze out the air a little bit. Let it come to home temperature. Then chill in fridge for 30 minutes.
Step 3
Put the pepper on a paper towel. Use another paper towel to take off the skin. Use a knife to take off the top and the bottom, get rid of the seeds. Wash up the pepper. Use the knife to remove any whiteness you see.
Step 4
Cut the pepper into 3 squares. Cut each square into 1/4 inch strips, then dice the strips in 45 degree angle, so you can cut them into pepper diamonds.
