Ingredients

  • 3-4 large yellow onions - cut in large dice
  • 1/2 stick unsalted butter
  • 1 tsp kosher salt
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • fresh ground black pepper to taste
  • 1 tbsp sherry vinegar
  • 1/4 cup dry sherry wine
  • 3 cups high-quality beef broth
  • 2 cups high-quality chicken broth
  • 1 cup water
  • toast
  • shredded Gruyere cheese

Instructions

Step 1

Cut each large yellow onion into half, then cut in large dices.

Step 2

put them and 1/2 stick unsalted butter into a pan.

Step 3

Then add in 1 tsp kosher salt to make the water come out.
Cook slowly over low heat for 40-45 minutes or until soft and golden.

Step 4

Then add in 2 sprigs fresh thyme,
1 bay leaf,
1 tbsp sherry vinegar,
1/4 cup dry sherry wine,
3 cups high-quality beef broth,
2 cups high-quality chicken broth,
1 cup water. Simmer slowly for 1 hour.

Step 5

Spoon some soup into a bowl, lay on a toast bread, some shredded Gruyere cheese.
Put the bowl into a oven, cook until golden, bubble.
