Ingredients

  • two 10-oz beef top sirloin steaks
  • 1/2 cup soy sauce
  • 1/2 cup sake
  • 1/4 cup mirin
  • 2 tbsp brown sugar
  • 2-oz piece of ginger

Instructions

Step 1

Grate a 2-oz piece of ginger, grab it, Use your fingers to squeeze the pulp and you get fresh ginger juice (1 tbsp)

Step 2

To teriyaki sauce, pour 1/2 cup soy sauce, 1/2 cup sake, 1/4 cup mirin and 2 tbsp brown sugar into a bowl. Mix well. Set aside.

Step 3

fully trim two 10-oz beef top sirloin steaks, get rid of excess fat. Use a fork and poke it all over so the marinade gets in there nice and deep. Pour over 1/2 cup of the marinade into a plastic bag, press out the air, seal up and refrigerate for 1 hour.

Step 4

To prepare the sauce, add 1 tbsp of cornstarch and 2 tbsp of water into a bowl, mix well. Pour the remaining marinade into a saucepan and boil it. Drizzle and whisk in the cornstarch mixture. Cook off the alcohol in the sake, and the little bit of cornstarch is going to just barely give this a little bit of thickness.

Step 5

Take out the beef from the marinade, then use paper towels to pat dry. In a hot sauté pan in a little vegetable oil, over med-high heat - Sear that beef for about 3-4 minutes for medium-rare/medium.

Step 6

Turn it, When almost done, you spoon the teriyaki sauce to the hot pan. when it hits the hot pan it's going to glaze the beef.

Step 7

Place them on a plate, cool for 5-10 minutes. Slice into nice thin pieces.

Step 8

Fan it on a plate and Use a spoon to pour the teriyaki sauce. Place a little sesame seed and green onion on the top. Enjoy!
