Recipe: Crockpot Beef Stew
Ingredients
- 1 1/2 to 2 pounds lean beef stew meat
- 8 carrots
- 6 medium potatoes
- 2 apples
- 1 onion
- 2 cups apple cider
- 2 teaspoons salt
- 1/2 teaspoon thyme

Step 1
Crockpot Vegetable PrepFirst prepare the vegetables. Start by peeling all of the carrots. Cut off the ends and then chop them in half. Next peel the potatoes. Then peel the apples. Cut the apples from the core and chop them into small pieces.
Cut off the end of the onion and by slicing the ends, mince half the onion.
To make thin slices of carrot, I m using a food processor. When all the carrots are sliced, empty them into a bowl.
Next slice the potatoes with the food processor. If the potatoes don t fit into your food processor, cut them in half until they fit. Put the potato slices into a crockpot and then the carrots.
Step 2
Combining Crockpot Stew IngredientsNext add the chopped apples, and the meat. Season the meat with the salt, thyme, and chopped onion.
Instead of a broth, I'm using the apple cider. Pour it all over the meat, place the cover on the crockpot and then cook on LOW heat for 8 to 10 hours.
Step 3
Thicken Crockpot StewAfter the stew is done cooking, make a thickening mixture by combining 2 tablespoons of flour and 2 tablespoons of cold water. Mix it so you have a thick paste. Take off the cover, add it to the stew and stir. Cook on HIGH for another 20 minutes until the stew is thick.
Serve the stew warm and enjoy.
