Ingredients
- 1 stick butter
- 24 ounces baby spinach
- 1/2 onion, finely diced
- 1 whole clove
- 4 cloves garlic, very finely minced
- 1/3 cup flour
- 1 1/2 cups milk
- salt and pepper, to taste
- large pinch of freshly ground nutmeg
Instructions
Step 1
Add 1/2 stick butter in a large pot over high heat. As soon as the butter melt, throw in 24 ounces baby spinach. Punch it down, give it a stir and cover the pot. Repeat it until the baby spinach fits the pot. Cook for 3 minutes. After it is cooked, drain it well.
Step 2
Add 1/2 stick butter, 1 whole clove, and 1/2 finely diced onion in a small pot over medium heat. Cook for 6-7 minutes or until the onion is soft. Take out the clove. Add 4 very finely minced cloves garlic and 1/3 cup flour. Give it a mix. Cook for 2-3 minutes. Mix in 1 1/2 cups milk. Whisk well. Bring it to a simmer, then turn the heat to low, cook on low heat for 10 minutes.
Step 3
Add some salt and black pepper, give it a mix. Add large pinch of freshly ground nutmeg. Mix well. Turn the heat to low.
Step 4
Put the baby spinach on a paper towel. Press it between pepper towel until complete dry. Roughly chop the spinach, and put it in the pot with the sauce. Stir well.
