Recipe: Corn Shiitake and Arugula Saute

Ingredients

  • 2 cups fresh corn
  • 2 cups sliced fresh shiitake mushrooms
  • large handful of arugula
  • 1 clove garlic
  • 1 cup chicken or vegetable stock
  • 1 tbl olive oil
  • 1/2 tsp butter
  • salt and pepper to taste

Instructions

Step 1

Use a knife to take off the stems of the mushrooms, then slice the mushroom.
Roughly chop the arugula.

Step 2

Add 1 tbsp olive oil in a saute pan over a heat. When the oil is hot, dump in the mushroom slices.
Add 1/2 tsp butter, and a pinch of salt in the pan. Give it a stir.
Saute that for 10 minutes or until the mushroom slices are browned.

Step 3

Turn the heat to medium, add 1 clove minced garlic, 2 cups fresh corn, 1 cup chicken or vegetable stock, and a pinch of pepper. Cook on medium heat until the stock is almost gone.

Step 4

Turn the heat off, add the chopped arugula. Stir well.

Step 5

Transfer to a serving plate, enjoy!
