Recipe: Corn Shiitake and Arugula Saute
Ingredients
- 2 cups fresh corn
- 2 cups sliced fresh shiitake mushrooms
- large handful of arugula
- 1 clove garlic
- 1 cup chicken or vegetable stock
- 1 tbl olive oil
- 1/2 tsp butter
- salt and pepper to taste
Instructions
Step 1
Use a knife to take off the stems of the mushrooms, then slice the mushroom.Roughly chop the arugula.
Step 2
Add 1 tbsp olive oil in a saute pan over a heat. When the oil is hot, dump in the mushroom slices.Add 1/2 tsp butter, and a pinch of salt in the pan. Give it a stir.
Saute that for 10 minutes or until the mushroom slices are browned.
Step 3
Turn the heat to medium, add 1 clove minced garlic, 2 cups fresh corn, 1 cup chicken or vegetable stock, and a pinch of pepper. Cook on medium heat until the stock is almost gone.
Step 4
Turn the heat off, add the chopped arugula. Stir well.
