Recipe: Chinese American Beef
Ingredients
- 1 1⁄8 lb beef tenderloin
- 2 tsp garlic - minced
- ½ tsp ginger - grated
- 2 cups (1 pint) broccoli
- 5 cups (2 2⁄3 pints) oil - for deep frying
- Beef And Broccoli Sauce
- 1 tbsp oyster sauce
- 2 tbsp soy sauce
- 3 tbsp water , mixed with cornstarch
- 2 tsp cornstarch - mixed with water
- ½ tsp sesame oil
- Marinade
- ½ tsp baking soda - Marinate
- 1 tsp sugar - Marinate
- 1 tbsp cornstarch - Marinate
- 1 egg white - Marinate
- 1 tbsp soy sauce - Marinate
- 1 tbsp rice wine - Marinate
- 1 tbsp water - Marinate
- large wok or skillet
Instructions
Step 1
Put 1 pound of beef tenderloin in the freezer for about 20 minutes to make it firmer and easier to slice.Cut against the grain of the meat while slicing. Make thin or thick slices depending on your tastes.
Add the beef slices and 1 tablespoon rice wine in a large bowl and mix them, and continue to add 1 tablespoon water, 1 tablespoon soy sauce, 1 egg white,
1 tablespoon cornstarch, 1 teaspoon sugar, and 1/2 teaspoon baking soda. Thoroughly mix them, set aside for 1 hour.
Do not marinate beef for over 2 hours because the baking soda will damage the meat.
Step 2
During the meat is marinating, use a knife to remove the broccoli florets by making a slight indentation into the bottom of the broccoli stem, then pulling apart.keep doing until you have bite-sized broccoli florets comprising 2 cups. Crush and mince some garlic cloves to make 2 teaspoons of minced garlic.
At last, grate a ginger root to make 1 teaspoon of ginger.
Step 3
Heat two inches of vegetable oil in a large wok from 325F-350F.The oil is ready when there is smoke or little squiggly lines in the oil.
For one pound of beef, deep fry in two to three batches in order not to overcrowd the pot. Stir continuously.
When the meat floats to the top or changes color,
strain and drain on a paper towel. Continue the process with the rest of the beef slices.
Step 4
Heating your wok until smoke, add 1 tablespoon of vegetable oil around the sides of the wok.Heat the oil hot and then add in the broccoli, garlic, and ginger and stir fry for about thirty seconds before adding in the beef.
Keep Stirring for several minutes and then add in the sauce ingredients: 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1/2 teaspoon sesame oil,
and a slurry made from 3 tablespoons water mixed with 2 teaspoons cornstarch. Make sure the slurry is fully mixed before you stir it into the beef and broccoli mix.
Stir continuously for about one minute and then remove from heat and serve.
