Recipe: Chili Chocolate Cookies with currants

Ingredients

  • 1/2 cup dried currants
  • 2 tablespoons Kahlua
  • 2 ounces bittersweet chocolate
  • 4 ounces unsweetened chocolate
  • 3 tablespoons unsalted butter
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 tsp cayenne pepper
  • 2 room temperature eggs
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 1 cup chocolate chips

Instructions

Step 1

Add 1/2 cup dried currants,
and 2 tablespoons Kahlua in a pot over low heat. Once it comes to a simmer, turn off the heat, let sit for a few minutes.

Step 2

Add water in a pot over low heat. Put a bowl on the pot, and add 4 ounces unsweetened chocolate,
3 tablespoons unsalted butter in the bowl. Stir around until the chocolate are melted. Then set aside.

Step 3

Add 1/2 cup flour,
1/4 teaspoon baking powder,
1/4 teaspoon salt,
1/8 teaspoon cinnamon,
and 1/2 teaspoon freshly ground black pepper in a bowl. Mix well.

Step 4

In another bowl, add 2 room temperature eggs
and 3/4 cup sugar. whisk well.
Stir in 2 tsp vanilla.
Pour the chocolate and butter mixture in the bowl. Mix well.
Dump in the flour mixture. Mix very well.

Step 5

Add the currants and the Kahlua mixture, and 1 cup chocolate chips in the same bowl. Mix very well. Then make the mixture into small balls on a baking mat in a baking pan.
Bake them in an oven at 350F for 12 minutes.

Step 6

After that, remove and transfer to a cooling rack. Cool before serve.
