Recipe: Chicken and Rice
Ingredients
- 1 whole chicken - cut in serving pieces
- salt and fresh ground black pepper to taste
- 2 tbsp olive oil
- 1 onion - diced
- 1 tbsp cumin
- 2 tbsp smoked paprika
- 4 cloves garlic - sliced thin
- 1/3 cup sliced green olives
- 2 tbsp capers
- 1 tsp dried oregano
- 1/4 tsp cayenne pepper
- 1 red bell pepper - diced
- 1 green bell pepper - diced
- 2 tsp sugar
- 2 tsp kosher salt
- 1/4 cup tomato paste
- 2 cups white long grain rice
- 4 cups chicken broth
Instructions
Step 1
Take 1 whole chicken, cut in serving pieces.Season with black pepper on both sides.
Step 2
Put some oil into a heavy duty pan on a high heat. Brown the both sides of chicken parts.Once brown, pour 1/2 cup water, turn off heat. set aside.
Step 3
Put 1 diced onion and some olive oil into a pot, cook for about 5 minutes.Then add in 1 tbsp cumin,
2 tbsp smoked paprika,
4 cloves thin sliced garlic,
1/3 cup sliced green olives,
2 tbsp capers,
1 tsp dried oregano,
1/4 tsp cayenne pepper. Stir well and cook for 1 minute.
Step 4
Add in 1 diced red bell pepper and 1 diced green bell pepper.Stir well. Add in some salt, sugar and tomato paste. Give it a little toasting for 45 seconds.
Step 5
Add in 2 cups white long grain rice. give it a little stir.dump in 4 cups chicken broth. Give it a little stir.
Step 6
Place the chick parts in the pot, above the rice.
Step 7
Cover and bake in an oven at 350F for 30 minutes.
