Recipe: Chicken and Rice

Ingredients

  • 1 whole chicken - cut in serving pieces
  • salt and fresh ground black pepper to taste
  • 2 tbsp olive oil
  • 1 onion - diced
  • 1 tbsp cumin
  • 2 tbsp smoked paprika
  • 4 cloves garlic - sliced thin
  • 1/3 cup sliced green olives
  • 2 tbsp capers
  • 1 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1 red bell pepper - diced
  • 1 green bell pepper - diced
  • 2 tsp sugar
  • 2 tsp kosher salt
  • 1/4 cup tomato paste
  • 2 cups white long grain rice
  • 4 cups chicken broth

Instructions

Step 1

Take 1 whole chicken, cut in serving pieces.
Season with black pepper on both sides.

Step 2

Put some oil into a heavy duty pan on a high heat. Brown the both sides of chicken parts.
Once brown, pour 1/2 cup water, turn off heat. set aside.

Step 3

Put 1 diced onion and some olive oil into a pot, cook for about 5 minutes.
Then add in 1 tbsp cumin,
2 tbsp smoked paprika,
4 cloves thin sliced garlic,
1/3 cup sliced green olives,
2 tbsp capers,
1 tsp dried oregano,
1/4 tsp cayenne pepper. Stir well and cook for 1 minute.

Step 4

Add in 1 diced red bell pepper and 1 diced green bell pepper.
Stir well. Add in some salt, sugar and tomato paste. Give it a little toasting for 45 seconds.

Step 5

Add in 2 cups white long grain rice. give it a little stir.
dump in 4 cups chicken broth. Give it a little stir.

Step 6

Place the chick parts in the pot, above the rice.

Step 7

Cover and bake in an oven at 350F for 30 minutes.

Step 8

After done, transfer to a plate to serve.
