Recipe: Chicken Breasts with Herbs and Mushrooms
Ingredients
- 2 boneless - skinless chicken breasts
- 2 cups chicken stock/broth
- 2 cups sliced mushrooms
- 1 tbl herbs de Provence - so not optional
- 2 cloves garlic
- black pepper and salt to taste
- 3 tbl olive oil
- 3 tbl unsalted butter
- flour
- fresh herbs to garnish - optional
- vinegar
Instructions
Step 1
Add the chicken breasts,2 cloves crushed garlic,
1 tbl herbs de Provence,
some black pepper,
1 tbl olive oil in a large mixing bowl. Rub the garlic mixture on the chicken Breasts well.
Refrigerate for at least 2 hours, overnight is great.
Step 2
Add 3 tbl unsalted butter and 3 tbl olive oil in a pan over a heat. After the butter is melted, put the chicken breasts in the pan.Cook for 5 minutes per side. Remove and set aside.
Step 3
Put 2 cups sliced mushrooms in the same hot pan. Add 2 tbsp salt. Turn the heat to medium high.When the mushroon slices are browned, sprinkle 1 tbsp flour. Turn the heat to medium. Stir constanlty.
Saute for about 7 minutes.
Add 2 cups chicken stock/broth and 1/2 tbsp vinegar. Turn the heat to high. Give it a stir.
Put the chicken breasts back in the pan. Bring it to a simmer. Turn the heat to low. Simmer for 5 minutes per side.
