Recipe: Cheese Souffle
Ingredients
- 2 cups hot prepared Bechamel sauce
- 4 oz grated Gruyere Cheese
- 1/4 tsp dry mustard
- 1/4 cup grated Parmesan
- To make the Soufflés:
- 1 cup of the Cheesy Bechamel Sauce Base described above
- 4 cold egg yolks
- 4 cold egg whites
- butter to grease ramekins
- Parmesan to dust ramekins and top of soufflés
Instructions
Step 1
Put 2 cups hot prepared Bechamel sauce into a pot over high heat.When the Bechamel sauce is hot,
add 4 oz grated Gruyere Cheese,
1/4 tsp dry mustard,
and 1/4 cup grated Parmesan. Stirring for 5 minutes.
Then put the mixture into a bowl.
Step 2
Pre-heat oven to 400F.
Step 3
Butter 6 cups, add some grated Parmesan. Tab around inside.
Step 4
Add 4 eggs into the bowl with 1 cup of Bechamel sauce mixture.whisk well.
Step 5
Put the egg white of 6 eggs in a bowl, make sure there is no yolk.Add some Bechamel sauce mixture, Whisk well.
Add 1/3 of the egg white mixture to the egg and Bechamel sauce mixture.
Whisk well.
Step 6
Then add the remaining egg white mixture in the bowl.Use the folding method to mix well.
Distribute the mixture into 6 cups on a baking pan.
Take a little bit Parmesan cheese to dust on the top of the cups.
