Recipe: Caramel Chicken
Ingredients
- 2.5 pounds chicken thighs
- 3/4 cup brown sugar
- 1/3 cup water
- 1/3 cup fish sauce
- 1/3 cup rice vinegar
- 1 tsp soy sauce
- 1 tbl grated fresh ginger
- 4 cloves garlic
- 2 jalapeno peppers
- 1 bunch green onions
- 1/2 cup roasted peanuts
- fresh cilantro to garnish
Instructions
Step 1
In a mixing bowl, add 3/4 cup brown sugar,1/3 cup water,
1/3 cup fish sauce,
1/3 cup rice vinegar,
1 tsp soy sauce,
1 tbl grated fresh ginger,
and 4 cloves crashed garlic. Mix well.
Step 2
Chop the chicken thighs (boneless, skinless, about 8-10 thighs) into pieces.
Step 3
Put 1 tbsp olive oil into a pan over high heat. When the oil is hot,put the chicken thighs in the pan. Spread them evenly.
Add a cup of the mixed sauce. Stir constantly over high heat.
Step 4
When the chicken are cooked and the color becomes a little brown,dump in the rest of mixed sauce. Give it a stir. Cook for 6-7 minutes.
Step 5
Then dump in 1 bunch sliced green onions, 1/2 cup roasted peanuts,and 1 bunch sliced green onions. Give it a toss.
