Recipe: Caramel Chicken

Ingredients

  • 2.5 pounds chicken thighs
  • 3/4 cup brown sugar
  • 1/3 cup water
  • 1/3 cup fish sauce
  • 1/3 cup rice vinegar
  • 1 tsp soy sauce
  • 1 tbl grated fresh ginger
  • 4 cloves garlic
  • 2 jalapeno peppers
  • 1 bunch green onions
  • 1/2 cup roasted peanuts
  • fresh cilantro to garnish

Instructions

Step 1

In a mixing bowl, add 3/4 cup brown sugar,
1/3 cup water,
1/3 cup fish sauce,
1/3 cup rice vinegar,
1 tsp soy sauce,
1 tbl grated fresh ginger,
and 4 cloves crashed garlic. Mix well.

Step 2

Chop the chicken thighs (boneless, skinless, about 8-10 thighs) into pieces.

Step 3

Put 1 tbsp olive oil into a pan over high heat. When the oil is hot,
put the chicken thighs in the pan. Spread them evenly.
Add a cup of the mixed sauce. Stir constantly over high heat.

Step 4

When the chicken are cooked and the color becomes a little brown,
dump in the rest of mixed sauce. Give it a stir. Cook for 6-7 minutes.

Step 5

Then dump in 1 bunch sliced green onions, 1/2 cup roasted peanuts,
and 1 bunch sliced green onions. Give it a toss.

Step 6

Serve on cooked rice. Enjoy
