Recipe: Cantonese Barbecued Seafood Ribs

Ingredients

  • 1/2 cup Hoisin sauce
  • 6-oz pineapple juice
  • 1 tbsp sambal chili sauce or hot sauce
  • 2 tbsp salt
  • 1/2 tsp 5-spice powder
  • 1 tbsp brown sugar
  • pinch of cayenne
  • 1/2 cup ketchup
  • 1/4 cup seasoned rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp Asian fish sauce
  • 2 tbsp Hoisin sauce

Instructions

Step 1

Take Full rack of pork ribs, trim a little bit of fat.

Step 2

Cut in half, put is in a zip bag, then pour 1/2 cup Hoisin sauce, 6-oz pineapple juice,
1 tbsp sambal chili sauce or hot sauce, give them some massage, marinate overnight.

Step 3

Next day, take out, pat dry on paper towel.

Step 4

Add 2 tbsp salt, 1/2 tsp 5-spice powder, 1 tbsp brown sugar, pinch of cayenne in a bowl, mix well.

Step 5

Add some mixture on the pork ribs, and cook the pork ribs in a oven at 300F for 1 hour.

Step 6

While roasting, prepare the basting sauce. Add 1/2 cup ketchup, 1/4 cup seasoned rice vinegar, 1 tbsp soy sauce,
1 tbsp Asian fish sauce, 2 tbsp Hoisin sauce in a bowl. Mix well.

Step 7

After 1 hour, take out the pork ribs, brush both sides with the basting sauce.

Step 8

Cook the pork ribs in a oven at 300F for 4 1/2 hours.
