Ingredients

  • 3 1/2 pound chicken
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp white pepper
  • 1 tsp ground dried herbs
  • 2 cups buttermilk
  • 2 cups flour
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 1/2 quarts peanut oil for frying

Instructions

Step 1

break down a chicken

Step 2

add 1 tsp salt, 1 tsp black pepper, 1 tsp paprika, 1 tsp ground dried herbs, 1/2 tsp white pepper, 1/4 tsp cayenne
mix them together for 25 seconds, add 2 cups buttermilk, mix them

Step 3

marinate 6 hours in fridge

Step 4

put season flour into a plastic pan, then add some paprika, some cayenne, some garlic powder, some white pepper
some onion powder, give them a mix

Step 5

mix the chicken pieces with the above flour mixture

Step 6

fried 8 chicken pieces at above 350F for 10 minutes, then 15 minutes
