Recipe: Bordelaise Sauce

Ingredients

  • 1 tsp butter
  • 4 large shallots
  • salt and fresh ground black pepper to taste
  • 1 cup good red wine
  • 2 cups real veal stock

Instructions

Step 1

Peel the shallots, and cut them into large slices.

Step 2

Add the shallot slices, 1 tsp butter and 1 pinch of salt in a pot. Saute for about 20 minutes, stir once a while.

Step 3

Add 1 cup good red wine in the pot. Bring it to a simmer, and reduce until most of the liquid are gone.

Step 4

Add 2 cups real veal stock in the pot. Bring it to a simmer, reduce by half.

Step 5

Strain the sauce in a pot, tap the strainer and give it a little squeeze to let sauce through.

Step 6

Taste and adjust seasoning.
