Recipe: Beef Stuffed Bell Peppers
Ingredients
- 6 bell peppers
- 1 1/2 pounds ground meat
- 1/2 onion, sliced
- 2 cups tomato sauce, divided
- 1/2 cup beef broth
- 1/4 tsp red pepper flakes
- 2 tsp salt
- 1/2 tsp fresh ground black pepper
- 1/4 cup chopped Italian parsley
- 4 cloves garlic, minced fine
- 1/2 cup finely grated real Parmesan cheese (Parmigiano Reggiano)
- 1 1/2 cups cooked rice
Instructions
Step 1
Cut off 1/2 inch of top of the bell peppers. Take out the stems and the seeds.Give it a little trim on the bottom so it can sit straight.
Step 2
Slice 1/2 onion.
Step 3
Add 1 1/2 cups tomato sauce, 1/2 cup beef broth, 1/4 tsp red pepper flakes and the 1/2 sliced onion in a baking plate.Mix them well. Sit your bell peppers in the baking plate.
Step 4
Add 1 1/2 pounds ground meat (I used all lean beef, but suggest you try 1 lb. beef with 1/2 lb. pork sausage),2 tsp salt,
1/2 tsp fresh ground black pepper,
1/4 cup chopped Italian parsley,
4 cloves garlic, minced fine,
1/2 cup finely grated real Parmesan cheese (Parmigiano Reggiano) in a mixing bowl. Mix well.
Add 1 1/2 cups cooked rice, mix well. This is the filling.
Step 5
Fill the bell peppers with the stuffed mixture. Add an extra spoon of tomato sauce on the top of each bell pepper.Put the top of the bell pepper on each pepper. Put a paper towel on the peppers. then cover the peppers with a foil.
Step 6
Cook in an oven at 375F for 1 hour. Then take off the foil and paper towel. Cook uncovered for 30 minutes or more.Remove them from the oven, add 1/4 cup chopped Italian parsley on the top of each bell pepper.
