Recipe: Beef Chateaubriand

Ingredients

  • 500 g centre-cut beef tenderloin
  • 4 tbsp olive oil
  • 25 g butter
  • a few sprigs of thyme
  • 4 garlic cloves - skin on
  • salt and pepper
  • 1 frying pan

Instructions

Step 1

Set the oven to 220ºC (425ºF or gas mark 7)

Step 2

Rub olive oil firmly into and all over the meat and season with salt and pepper. Make sure the beef is well coated.

Step 3

Add oil into a frying pan over a high heat. When hot, put the beef into the pan. Sear each side for about 1 - 1.5 minutes.

Step 4

Baste the beef all over with the juices every two minutes. Turn the beef over, make sure to cook evenly on all sides.

Step 5

Remove the pan from oven when done. Place a inverted spoon on the tray.
place the beef on top of the spoon to rest with tongs, so there is a circulation of air around it.
Leave it for a few minutes.

Step 6

Slice Chateaubriand across the grain and season it with salt and pepper.
Serve with a rich, Béarnaise Sauce.
