Recipe: Bean and Greens

Ingredients

  • 1 bunch kale or any dark leafy greens
  • 12 oz of white beans
  • 1/2 tsp red pepper flakes
  • 1/4 cup chicken stock
  • 3 cloves garlic
  • 3 tbl olive oil
  • salt to taste

Instructions

Step 1

Add 3 tbl olive oil into a cold pan. Put the pan on low heat, add some garlic.
When the garlic becomes soft and tender, add 1 bunch kale or any dark leafy greens.
Pour in 1/4 cup chicken stock. Turn the heat to medium. Give it a stir.

Step 2

Add 1/2 tsp red pepper flakes and salt. Stir well.
When the greens become soft and tender, and there is liquid coming out,
add 12 oz of drained white beans.

Step 3

Cover and simmer on low heat for aobut 5 minutes.
Use a spatula to push the vegetables against the side of the pan. So the liquid can be thickened.

Step 4

After done, transfer to a serving plate, topped with some red pepper flakes.
