Recipe: Bean and Greens
Ingredients
- 1 bunch kale or any dark leafy greens
- 12 oz of white beans
- 1/2 tsp red pepper flakes
- 1/4 cup chicken stock
- 3 cloves garlic
- 3 tbl olive oil
- salt to taste
Instructions
Step 1
Add 3 tbl olive oil into a cold pan. Put the pan on low heat, add some garlic.When the garlic becomes soft and tender, add 1 bunch kale or any dark leafy greens.
Pour in 1/4 cup chicken stock. Turn the heat to medium. Give it a stir.
Step 2
Add 1/2 tsp red pepper flakes and salt. Stir well.When the greens become soft and tender, and there is liquid coming out,
add 12 oz of drained white beans.
Step 3
Cover and simmer on low heat for aobut 5 minutes.Use a spatula to push the vegetables against the side of the pan. So the liquid can be thickened.
