Recipe: Bay Scallop and Mango Ceviche

Ingredients

  • 2 lbs Bay scallops - or other diced fish in similar size pieces
  • 1 ripe mango
  • 1 red bell pepper
  • 1 jalepeno
  • 1/2 bunch cilantro
  • 1/3 cup lemon juice
  • 3/4 cup seasoned rice vinegar
  • 1 tsp schezchan pepper
  • 1/2 tbl cumin

Instructions

Step 1

Wash 2 lbs Bay scallops, drain well. Put them into a big bowl,
add the diced mango and red bell pepper,
1 jalepeno,
1/2 bunch cilantro,
1/3 cup lemon juice,
3/4 cup seasoned rice vinegar,
1 tsp schezchan pepper,
and 1/2 tbl cumin. Mix well.

Step 2

Wrap the bowl with a plastic, Press the plastic down. Wrap it with another plastic.
After 1 hour, Toss the mixture.

Step 3

Re-wrap that again, and sit for 1 hour.
