Recipe: Batter Fish Recipe

Ingredients

  • white fish
  • 1 1/3 cups all purpose flour
  • 1 teaspoon salt
  • 1 tablespoon cooking oil
  • 2 egg yolks, beaten (keep the egg whites for later)
  • 3/4 cup flat beer

Instructions

Step 1

Combine the flour, salt, oil and egg yolks in a bowl and mix well. Then gradually add the beer while stirring constantly. Cover the batter and let it rest in the refrigerator for 6 hours (3hrs minimum). Remove from the refrigerator and just before coating the fish, add to the batter mix the 2 egg white which have been stiffly beaten.

Step 2

The fish pieces should be patted dry to help the batter stick. Fry in heated cooking oil at 50 degrees F until the fish is done.
