Baked Summer Squash with Goat Cheese
Ingredients
- 3 small summer squash
- 6 tbl goat cheese
- 3 tbl romesco sauce
- 3 tbl olive oil
- 2 tbl plain bread crumbs
- salt and pepper to taste
Instructions
Step 1
Cut off the top and bottom of the summer squash. Slice it into half.
Step 2
Use a spoon to take off the center of the summer squash.
Step 3
Preheat oven to 450F.Add some olive oil into a pan, then Place the summer squashes in the pan. Seasoned the summer squashes with salt and pepper.
Step 4
Crumble 1-1.5 tbsp goat cheese and add them in the center of the squash. Add 1/2 -1 tbsp romesco sauce, bread crumbs and then a tbsp olive oil in the center of the squash. Fill the remaining squashes.
