Recipe: Bacon Clams Veggies Dip

Ingredients

  • 2 (6.5 ounce) cans minced clams, with juice
  • 1 pound cream cheese
  • 6-8 strips bacon
  • 1/2 tablespoon butter
  • 1 jalapeno, seeded, minced
  • 1/2 cup small diced red bell pepper
  • 1/3 cup small diced celery
  • 2 cloves minced garlic
  • 1/4 cup minced green onions
  • 1/2 lemon
  • hot sauce to taste
  • freshly ground black pepper to taste

Instructions

Step 1

Cut the bacon strips into 1/4 inch pieces. Put them and 1/2 tablespoon butter in a heavy duty pan over medium heat. Cook until crispy.

Step 2

Remove the bacon pieces. Dump in the veggies. Cook for 3 minutes. Add clam juice from one can. Turn the heat to high. Reduce the clam juice until almost gone. It takes about 3 minutes. Transfer to a plate to cool.

Step 3

Add 2 (6.5 ounce) cans minced clams,
1 pound cream cheese,
the bacon pieces,
the veggies,
the juice of 1/2 lemon,
and some freshly ground black pepper in a bowl. Mix well.

Step 4

Transfer the mixture in a serving plate, topped with some chopped green onion and some beacon pieces. Served on some crackers.
