Recipe: Asiago Chicken Orzo
Ingredients
- 1 cup water
- 1 can fat-free - less-sodium chicken broth
- 12 ounces skinned - boned chicken breast - bite-size pieces
- 1 1/4 cups uncooked orzo - rice-shaped pasta
- 1 cup frozen green peas - thawed
- 1/2 cup (2 ounces) grated Asiago cheese - divided
- 1/4 teaspoon salt
- 1/4 teaspoon dried rosemary, basil or oregano
- 1/8 teaspoon black pepper
Instructions
Step 1
Put chicken stock or broth into a pot, Bring it to a boil,then put in chicken breast, 1 1/4 cups uncooked orzo (rice-shaped pasta),
bring it to a simmer.
Step 2
Lower the heat to med-low.Add in 1/4 teaspoon salt,
1/4 teaspoon dried rosemary, basil, or oregano,
1/8 teaspoon black pepper.
Simmer, stirring for 12 minutes.
Step 3
By the end of 12 minutes, the pasta is tender.Turn off the heat. Dump in 1 cup frozen green peas, 1/2 cup (2 ounces) grated Asiago cheese.
Mix well.
