Recipe: Arugula Beans

Ingredients

  • 4 strips bacon - sliced
  • 1 tbsp olive oil
  • salt and fresh ground black pepper to taste
  • 15 oz jar or can butter beans - drained and rinsed
  • 3 cloves garlic - minced
  • large handful arugula - chopped
  • 1/2 lemon - juiced

Instructions

Step 1

Add 1 tbsp olive oil in a pan over medium heat.
When hot, add 4 strips sliced bacon. Stir around and cook a few minutes.

Step 2

Roughly chop the large handful arugula.

Step 3

When the bacon becomes brown, add 15 oz jar or can butter beans. Stir around.
Add some salt and fresh ground black pepper. Stir around and cook for about 3 minutes.

Step 4

Add 3 cloves minced garlic. Cook for about 30 seconds. Add the arugula. Toss around.
Cook for about 1 minutes. Turn off the heat.

Step 5

Add the juice of 1/2 lemon. Stir around.
