Recipe: Arugula Beans
Ingredients
- 4 strips bacon - sliced
- 1 tbsp olive oil
- salt and fresh ground black pepper to taste
- 15 oz jar or can butter beans - drained and rinsed
- 3 cloves garlic - minced
- large handful arugula - chopped
- 1/2 lemon - juiced
Instructions
Step 1
Add 1 tbsp olive oil in a pan over medium heat.When hot, add 4 strips sliced bacon. Stir around and cook a few minutes.
Step 2
Roughly chop the large handful arugula.
Step 3
When the bacon becomes brown, add 15 oz jar or can butter beans. Stir around.Add some salt and fresh ground black pepper. Stir around and cook for about 3 minutes.
Step 4
Add 3 cloves minced garlic. Cook for about 30 seconds. Add the arugula. Toss around.Cook for about 1 minutes. Turn off the heat.
