Recipe: Aromatic Vegetable and beans Ragout

Ingredients

  • 2 Jars White Beans (12 oz each) Cannellini or White Navy Beans
  • 1 Onion
  • 2 Carrots
  • 2 Stalks Celery
  • 1/3 cup Diced Tomato
  • Olive Oil
  • Chicken Stock
  • Herb de Provence
  • Bay Leaf
  • 3 Cloves Garlic
  • Black Pepper
  • Salt
  • 1 Bunch Fresh Italian Parsley

Instructions

Step 1

Dice the onion and celery into about 1/4 inch pieces.
Dice the carrots into 1/4 inch cubes.

Step 2

Add 2 tbsp olive oil in a pot on medium heat.
When it is hot, add the onion, celery and carrot pieces in the pot.
Saute for about 5 minutes.

Step 3

Add 3 Cloves chopped Garlic. Give it a stir.
Add 1 tbsp black pepper, and 2 pinch of salt. Give it a stir.
Add 1 1/2 tbsp Herb de Provence. Give it a stir.
Add just enough Chicken Stock to cover. Simmer for 5 minutes.

Step 4

Add 2 Jars White Beans. Stir gently.
Add the Bay Leaf, and 1/3 cup Diced Tomato. Give it a stir.
Simmer this on low heat for 10-15 minutes or until tender.

Step 5

Shave the leaves off from the Parsley. Mince the leaves well.
Add them in the pot. Use the folding method to stir the mixture in the pot.
