Recipe: All-American Shrimp Cocktail

Ingredients

  • 2 pounds colossal shrimp
  • 3 quarts cold water
  • 1/4 onion, sliced
  • 2 garlic cloves, peeled and bruised
  • 2 springs tarragon
  • 1 bay leaf
  • 1 tablespoon Old Bay
  • 1/2 lemon
  • 1 tsp black peppercorns
  • Cocktail Sauce:
  • 1/4 cup horseradish, or to taste
  • 1/4 cup chili sauce
  • 1/2 cup ketchup
  • 1 tsp fresh lemon juice
  • 1 tsp Worcestershire sauce
  • few drops of hot sauce, optional
  • pinch of salt

Instructions

Step 1

Add 3 quarts cold water,
1/4 onion - sliced,
2 garlic cloves - peeled and bruised,
2 springs tarragon,
1 bay leaf,
1 tablespoon Old Bay,
1/2 lemon,
and 1 tsp black peppercorns in a pot over high heat.
Give it to a stir, bring it to a simmer, then simmer for 15 - 20 minutes.
This is the Poaching Liquid.

Step 2

Add 1/4 cup horseradish,
1/4 cup chili sauce,
1/2 cup ketchup,
1 tsp fresh lemon juice,
1 tsp Worcestershire sauce,
few drops of hot sauce - optional,
and a pinch of salt in a bowl. Mix well.

Step 3

While the Poaching Liquid is boiling, dump in the shrimps in the pot with it.
Let boil for 5 minutes. Then transfer the shrimps in icy water.
Peel the shell off.

Step 4

Serve with sauce.
