Recipe: Addictive Chocolate Cookies

Ingredients

  • 1/2 cup dried currants
  • 2 tablespoons Kahlua
  • 2 ounces bittersweet chocolate
  • 4 ounces unsweetened chocolate
  • 3 tablespoons unsalted butter
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 tsp cayenne pepper
  • 2 room temperature eggs
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 1 cup chocolate chips

Instructions

Step 1

Put 1/2 cup dried currants and
2 tablespoons Kahlua into a pan.
Heat the pan until they start to simmer.
Turn off the heart and let it sit.

Step 2

Put water into a sauce pan over a low heat, about 1 inch depth.
Place a bowl on the pan, add 3 tablespoons unsalted butter,
2 ounces bittersweet chocolate,
and 4 ounces unsweetened chocolate
into the bowl.
Cook until the chocolate melt. Stir once a while.
Turn off the heat, set aside.

Step 3

Add 1/2 cup flour,
1/4 teaspoon baking powder,
1/4 teaspoon salt,
1/8 teaspoon cinnamon,
1/2 teaspoon freshly ground black pepper,
and 1/8 tsp cayenne pepper
into a bowl. Mix well.

Step 4

Add 2 room temperature eggs and
3/4 cup sugar into another bowl.
Whisk them until light and puffy.
Add in 2 tsp vanilla. Mix well.
Pour in the chocolate mixture in step 2. Mix well.
Dump in the flour mixture in step 3. Mix well.
Dump in the currants and Kahlua mixture in step 1,
and 1 cup chocolate chips. Mix well.

Step 5

Once they are all well mixed. Use a tool to drop the mixture into balls on baking pans.
Put the baking pans into oven, and cook at 350F for 12 minutes.
Then take them out, leave them for 5 minutes.

Step 6

Then transfer the Chocolate Cookies on a cooling rack.
